Mom's Fabulous Rolls

These are the rolls we make at every holiday and family gathering. They are legendary. I also use the dough to make pizza pin wheels and I fry little dough balls to make scones. They're amazing.
1 T dry yeast (not instant)
1/2 c warm water
3 1/2 c bread flour
1/4 c sugar
1 t salt
1 egg
1 c milk
1 cube butter
Proof your yeast by putting it in the warm water. Add 1 T sugar and set aside.
Scald your milk and butter in the microwave. Put it in a glass bowl or large measuring cup. Basically just heat it up until the butter is melted.
Pour your milk and butter in a large bowl. Add the salt and sugar. Add 1 1/2 c four and stir. Make sure your mixture isn't too hot then add the egg and yeast. Add the rest of the flour (2 c) until you have a soft dough. It will be very moist. Let the dough rise for 1 1/2 hours or until it doubles in size.
Punch down the dough and pour it onto a large cutting board with flour on it. Kneed the dough to get the bubbles out. Cut the dough and form them into round balls. Place them on a greased cookie sheet. Rise for another 30 minutes.
Bake at 400 for 15 minutes. Butter the tops when they come out of the oven.
