Sesame-Ginger Beef Stir-Fry

12 oz boneless beef sirloin steak
1 cup chicken broth
1 tbsp grated fresh ginger or 1 tsp ground ginger
1 tbsp cornstarch
2 cloves garlic, minced
1 tsp ground coriander
1/8 tsp crushed red pepper
2 tsp sesame oil
1 medium onion, halved and sliced
2 cups broccoli florets
1 medium red sweet bell pepper, seeded and cut in bite-size strips
1 ½ cups hot cooked brown rice
1 tsp sesame seeds, toasted (optional)


1.     Cut beef into thin bite-size strips
2.     For sauce, in small bowl stir together chicken broth, ginger, cornstarch, garlic, coriander, and crushed red pepper; set aside
3.     In large skillet heat oil over medium-high heat. Add onion, cook for about 2 minutes. Add broccoli and sweet peppers and cook until crisp-tender. Remove from skillet
4.     Add beef strips to skillet and cook. Push meat from center of skillet.

5.     Stir sauce. Add sauce to center of skillet. Cook and stir until thickened and bubble. Return cooked veggies to skillet; stir to coat all ingredients with sauce. Serve with rice.  Sprinkle with sesame seeds if desired.
